Going on student exchange to Italy at age 16 and developing a love of food and travel led Nicholas to the realisation he wanted to pursue a career in tourism. He studied a Bachelor of Business (Hotel Management) at the International College of Hotel Management and then developed an exciting career in 5 star hotels in Thailand, Melbourne and Hamilton Island.

Nicholas’s hotel career began as a management trainee at The Surin in Phuket, Thailand and he then returned to Australia as a Service Express Agent at The Westin Melbourne. He then gained experience across various facets of hotels with roles comprising VIP Resort Host at Qualia Hamilton Island, Front Office Manager at Oaks Hotel, Brisbane and Senior Duty Manager at The Emporium Hotel in Brisbane.

In 2018, Nicholas was part of the pre-opening team for the new Emporium Hotel at South Bank, Brisbane as the Food and Beverage Manager where he was responsible for the set up of the food and beverage operations (5 bars, 2 restaurants and events venues for up to 500) and recruitment and training of 150 staff and the subsequent ongoing management of all food and beverage outlets in the hotel.

In 2021, Nicholas moved to Howard Smith Wharves, a vibrant Brisbane waterfront development of bars, restaurants and events spaces as a Venue Manager where he is responsible for the day-to-day operations and leading the guest service and experience.
